  • 3 Large Eggs
  • 1 cup Rice Milk
  • 1 cup Oil (preferably safflower oil)
  • 1 cup Applesauce
  • 3 cups Waffle Mix
  • 1/2 teaspoon Vanilla


In a medium bowl, beat eggs. Add in milk, oil, applesauce and vanilla. Mix well. Add in dry mix, stir until just blended.
Rice milk produces the best results. Whole milk may be substituted
for the rice milk.
Waffles - Preheat the waffle iron following manufacturers instructions. Coat the waffle iron with non-stick cooking spray and pour enough batter to just cover the waffle grid. Cook until golden brown.
Pancakes – Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop approximately ¼ cup of batter onto the griddle. Brown on both sides and serve hot.
